  3. Prep and set aside parsnip: chopped

  5. Pre-heat - 190°C
  6. Get a clean large roasting dish
  7. Add prepared shallot
  8. Add prepared potato
  9. Add carrot
  10. Add prepared parsnip
  11. Drizzle with olive oil
  12. Sprinkle with salt & pepper
  13. Roast - 30 min, 190°C
  14. Add prepared courgette
  15. Add rosemary
  16. Toss
  17. Roast - 10 min, 190°C
  18. Get a clean small bowl
  19. Add wholegrain mustard
  20. Add maple syrup
  21. Add salt
  22. Mix
  23. Get large roasting dish
  24. Add pork chop
  25. Transfer half of glaze to large roasting dish
  26. Roast - 20 min, 190°C
  27. Flip
  28. Transfer glaze to large roasting dish
  29. Roast until cooked through - 15 min, 190°C
  30. Serve
