Step preview

  1. Pre-heat oven - 190°C
  2. Add shallot, potato, carrot and parsnip to a clean large roasting dish
  3. Drizzle with olive oil
  4. Sprinkle with salt & pepper
  5. Roast - 30 min, 190°C
  6. Add courgette and rosemary to the large roasting dish
  7. Toss
  8. Roast - 10 min, 190°C
  9. Add wholegrain mustard, maple syrup and salt to a clean small bowl
  10. Mix
  11. Add pork chop to the large roasting dish
  12. Transfer half of glaze to large roasting dish
  13. Roast - 20 min, 190°C
  14. Flip
  15. Transfer glaze to large roasting dish
  16. Roast until cooked through - 15 min, 190°C
  17. Serve
