Method
1. Add butter and milk to the TM5 bowl
2. Heat - approx 2 min, 49°C, speed 2
3. Then add bread flour, fresh yeast, sugar and salt to the TM5 bowl
4. Blend - approx 10 sec, speed 6
5. Knead - approx 3 min, dough
6. Transfer content of TM5 bowl to work surface
7. Wrap loosely with plastic wrap
8. Let rest onto work surface until doubled
9. Pre-heat oven - 221°C
10. Divide into halves with dough scraper
11. Roll
12. Twist
13. Prove until doubled
14. Add egg and milk to a clean small bowl
15. Beat until combined
16. Brush
17. Prove dough slightly
18. Bake until light golden - 12 min, 221°C
19. Let cool completely
