    150g (about ¾ cup)

Step preview

  1. Add egg yolk, single cream, whole milk, vanilla bean paste, golden caster sugar and sea salt to the TM5 bowl
  2. Fit TM5 bowl to TM5
  3. Cook - approx 7 min, 80°C, speed 4
  4. Transfer content of TM5 bowl to large mixing bowl
  5. Stir and let cool
  6. Cover with parchment paper
  7. Let rest in fridge until cold - 24 hr
  8. Transfer content of large mixing bowl to ice cube tray
  9. Freeze until hard
  10. Transfer content of ice cube tray to TM5 bowl
  11. Mix - approx 20 sec, speed 9
  12. Serve
