Step preview

  1. Fit the TM5 bowl to TM5
  2. Add egg yolk
  3. Add single cream
  4. Add whole milk
  5. Add vanilla bean paste
  6. Add golden caster sugar
  7. Add sea salt
  8. Cook - approx 7 min, 80°C, speed 4
  9. Transfer content of TM5 bowl to large mixing bowl
  10. Stir and let cool
  11. Cover with parchment paper
  12. Let rest in fridge until cold - 24 hr
  13. Transfer content of large mixing bowl to ice cube tray
  14. Freeze until hard
  15. Transfer content of ice cube tray to TM5 bowl
  16. Mix - approx 20 sec, speed 9
  17. Serve
