  4. Prep and set aside red onion: finely sliced

  8. Pre-heat - 30 min, 190°C
  9. Get a clean saucepan
  10. Add brown sugar
  11. Add balsamic vinegar
  12. Heat until sugar has dissolved - medium heat
  13. Boil
  14. Simmer - approx 20 min
  15. Get a clean medium bowl
  16. Add olive oil
  17. Add prepared garlic clove
  18. Add prepared parmesan cheese
  19. Add pesto
  20. Mix
  21. Get a clean plate
  22. Add polenta
  23. Cut
  24. Arrange polenta in glass baking dish
  25. Bake - 15 min, 190°C
  26. Get a clean medium bowl
  27. Add prepared cherry tomatoes
  28. Add prepared red onion
  29. Add prepared fresh parsley
  30. Add prepared fresh chives
  31. Add prepared black olives
  32. Add pine nuts
  33. Add salt
  34. Mix
  35. Arrange filling in glass baking dish
  36. Bake - 15 min, 190°C
  37. Get saucepan
  38. Add olive oil
  39. Beat until combined
  40. Transfer content of glass baking dish to serving plate
  41. Drizzle serving plate with glaze
  42. Serve with rocket
