Step preview

  1. Pre-heat oven - 30 min, 190°C
  2. Add brown sugar and balsamic vinegar to a clean saucepan
  3. Heat until sugar has dissolved - medium heat
  4. Boil
  5. Simmer - approx 20 min
  6. Add olive oil, garlic clove, parmesan cheese and pesto to a clean medium bowl
  7. Mix
  8. Add polenta to a clean plate
  9. Cut
  10. Arrange polenta in glass baking dish
  11. Bake - 15 min, 190°C
  12. Add cherry tomatoes, red onion, fresh parsley, fresh chives, black olives, pine nuts and salt to a clean medium bowl
  13. Mix
  14. Arrange filling in glass baking dish
  15. Bake - 15 min, 190°C
  16. Add olive oil to the glaze
  17. Beat until combined
  18. Transfer content of glass baking dish to serving plate
  19. Drizzle serving plate with glaze
  20. Serve with rocket in the serving plate
