  1. Prep and set aside nutmeg: grated
  2. Get a clean saucepan
  3. Add potato
  4. Cover with water
  5. Cover
  6. Boil
  7. Simmer until cooked through - 20 min
  8. Drain
  9. Peel
  10. Mash
  11. Transfer potatoes to large mixing bowl
  12. Add prepared nutmeg
  13. Sift plain flour
  14. Season with salt & pepper
  15. Add egg
  16. Mix a clean work surface quickly until small clumps form
  17. Knead gently until smooth
  18. Transfer dough to work surface
  19. Divide into thirds with dough scraper
  20. Roll
  21. Cut
  22. Get a clean large saucepan
  23. Add water
  24. Transfer dough balls to baking sheet
  25. Add salt to a large saucepan
  26. Boil
  27. Transfer dough balls to large saucepan
  28. Cook - approx 4 min
  29. Remove with slotted spoon
  30. Serve immediately
