Step preview

  1. Add potato to a clean saucepan
  2. Cover with water
  3. Cover
  4. Boil
  5. Simmer until cooked through - 20 min
  6. Drain
  7. Peel
  8. Mash
  9. Transfer potatoes to large mixing bowl
  10. Add nutmeg to the dough
  11. Sift plain flour into the dough
  12. Season with salt & pepper
  13. Add egg to the dough
  14. Mix a clean work surface quickly until small clumps form
  15. Knead gently until smooth
  16. Transfer dough to work surface
  17. Divide into thirds with dough scraper
  18. Roll
  19. Cut
  20. Add water to a clean large saucepan
  21. Transfer dough balls to baking sheet
  22. Add salt to the large saucepan
  23. Boil
  24. Transfer dough balls to large saucepan
  25. Cook - approx 4 min
  26. Remove with slotted spoon
  27. Serve immediately
