Step preview

  1. Pre-heat oven - 180°C
  2. Add aubergine, red onion, garlic clove, vegetable stock and red wine to a clean large saucepan and cover
  3. Simmer - 5 min, low heat
  4. Uncover
  5. Cook until tender - 5 min, low heat
  6. Remove and let cool
  7. Purée with stick blender
  8. Add minced beef to a clean frying pan
  9. Fry in frying pan until browned
  10. Transfer mixture to meat
  11. Add tinned chopped tomatoes to the meat
  12. Simmer gently in frying pan until thickened - 10 min
  13. Add egg white and ricotta cheese to a clean small bowl
  14. Beat
  15. Add milk and parmesan cheese to the cheese mixture
  16. Beat
  17. Season with black pepper to taste
  18. Arrange
  19. Transfer meat to medium roasting dish
  20. Add pasta sheets to the medium roasting dish
  21. Transfer cheese mixture to medium roasting dish
  22. Arrange
  23. Sprinkle with parmesan cheese
  24. Bake until golden brown - 35 min, 180°C
  25. Serve
