This slow-cooked curry takes hours to cook, but it's worth the wait. Tender beef melts into the aromatic flavours of cardamom, cinnamon and star anise, while chillis and ginger add heat and warmth.

Step preview

  1. Add ground turmeric, chilli powder, garlic clove, ginger, galangal, black peppercorns, fresh chilli and salt to a clean food processor bowl
  2. Blend until just blended
  3. Add lemongrass stalk and onion to the spices
  4. Blend until well blended
  5. Add tamarind paste to the spices
  6. Blend until smooth
  7. Add vegetable oil to a clean frying pan
  8. Heat in frying pan - medium-high heat
  9. Add beef filet to the frying pan
  10. Fry bit by bit in frying pan until browned
  11. Transfer content of frying pan to plate
  12. Transfer spices to frying pan
  13. Fry in frying pan while stirring occasionally - 3 min, medium-high heat
  14. Transfer meat to frying pan
  15. Add coconut milk, water, brown sugar, kaffir lime leaves, star anise pod, cinnamon stick and salt to the frying pan
  16. Reduce in frying pan to simmer - 4 hr 30 min, low heat
  17. Heat in frying pan until thickened while stirring occasionally
  18. Serve immediately
