  1. Prep and set aside garlic clove: chopped
  2. Prep and set aside ginger: peeled & grated
  3. Prep and set aside galangal: peeled & grated
  4. Prep and set aside black peppercorns: crushed
  5. Prep and set aside fresh chilli: chopped
  6. Prep and set aside lemongrass stalk: chopped
  7. Prep and set aside onion: chopped
  8. Prep and set aside beef filet: sliced
  9. Prep and set aside kaffir lime leaves: shredded
  10. Get a clean food processor bowl
  11. Add ground turmeric
  12. Add chilli powder
  13. Add prepared garlic clove
  14. Add prepared ginger
  15. Add prepared galangal
  16. Add prepared black peppercorns
  17. Add prepared fresh chilli
  18. Add salt
  19. Blend until just blended
  20. Add prepared lemongrass stalk
  21. Add prepared onion
  22. Blend until well blended
  23. Add tamarind paste
  24. Blend until smooth
  25. Get a clean frying pan
  26. Add vegetable oil
  27. Heat in frying pan - medium-high heat
  28. Add prepared beef filet
  29. Fry bit by bit in frying pan until browned
  30. Transfer content of frying pan to plate
  31. Transfer spices to frying pan
  32. Fry in frying pan while stirring occasionally - 3 min, medium-high heat
  33. Transfer meat to frying pan
  34. Add coconut milk
  35. Add water
  36. Add brown sugar
  37. Add prepared kaffir lime leaves
  38. Add star anise pod
  39. Add cinnamon stick
  40. Add salt
  41. Reduce in frying pan to simmer - 4 hr 30 min, low heat
  42. Heat in frying pan until thickened while stirring occasionally
  43. Serve immediately
