Step preview

  1. Add red bell pepper, garlic clove, fresh chilli, lemon, extra virgin olive oil and mint to a clean small bowl
  2. Mix until well combined then set aside
  3. Heat olive oil to a clean frying pan
  4. Add courgette to the frying pan
  5. Fry in frying pan - 2 min, medium heat
  6. Turn
  7. Fry in frying pan until light golden - 1 min, medium heat
  8. Season with salt & pepper to taste
  9. Transfer content of frying pan to plate
  10. Heat olive oil to the frying pan
  11. Add halloumi to the frying pan
  12. Fry evenly in frying pan until golden brown - 4 min, medium heat
  13. Transfer content of frying pan to plate
  14. Serve
