  1. Prep and set aside red bell pepper: roasted & finely chopped
  2. Prep and set aside garlic clove: crushed
  3. Prep and set aside fresh chilli: destalked & finely chopped
  4. Prep and set aside lemon: zest of & juice of
  5. Prep and set aside mint: chopped
  6. Prep and set aside courgette: halved lengthways
  7. Prep and set aside halloumi: sliced
  8. Get a clean small bowl
  9. Add prepared red bell pepper
  10. Add prepared garlic clove
  11. Add prepared fresh chilli
  12. Add prepared lemon
  13. Add extra virgin olive oil
  14. Add prepared mint
  15. Mix until well combined then set aside
  16. Get a clean frying pan
  17. Heat olive oil
  18. Add prepared courgette
  19. Fry in frying pan - 2 min, medium heat
  20. Turn
  21. Fry in frying pan until light golden - 1 min, medium heat
  22. Season with salt & pepper to taste
  23. Transfer content of frying pan to plate
  24. Get frying pan
  25. Heat olive oil
  26. Add prepared halloumi
  27. Fry evenly in frying pan until golden brown - 4 min, medium heat
  28. Transfer content of frying pan to plate
  29. Serve
