  1. Prep and set aside pak choi: quartered
  2. Prep and set aside fresh chilli: sliced
  3. Prep and set aside coriander: chopped
  4. Get a clean large saucepan
  5. Add chicken stock
  6. Add chilli sauce
  7. Add fish sauce
  8. Add dark soy sauce
  9. Add rice wine vinegar
  10. Add mirin
  11. Boil
  12. Reduce until simmering
  13. Add chicken breast
  14. Cook for 15min on low heat until cooked through
  15. Remove
  16. Cut
  17. Add noodles
  18. Add prepared pak choi
  19. Cook for 2min until tender
  20. Transfer soup to 4 large serving bowls
  21. Return
  22. Get large serving bowl
  23. Arrange bean sprout
  24. Sprinkle with prepared fresh chilli
  25. Garnish with prepared coriander
  26. Garnish with lime
  27. Serve
