Step preview

  1. Add chicken stock, chilli sauce, fish sauce, dark soy sauce, rice wine vinegar and mirin to a clean large saucepan
  2. Boil
  3. Reduce until simmering
  4. Add chicken breast to the soup
  5. Cook until cooked through - 15 min, low heat
  6. Remove
  7. Cut
  8. Add noodles and pak choi to the soup
  9. Cook until tender - 2 min
  10. Transfer soup to 4 large serving bowls
  11. Return
  12. Arrange bean sprout in the large serving bowl
  13. Sprinkle with fresh chilli
  14. Garnish with coriander and lime
  15. Serve
