Sorbet is a fat-free and dairy-free way to cool down in the summer. We used honeydew melon, but cantaloupe makes a beautifully coloured and delicately flavoured dessert also.

    INGREDIENTS


  • Lime juice icon
    Lime juice

    60 g (about 2)

  • Granulated sugar icon
    Granulated sugar

    70 g (about ¼ cup)

  • Honey icon

    20 g (about 2 ⅞ teaspoons)

  • Melon icon
    Melon

    700 g (about ⅔)peeled, diced

    METHOD


  • 1. Add lime juice, granulated sugar and honey to a clean saucepan
  • 2. Heat until dissolved
  • 3. Let cool
  • 4. Add melon to a clean large mixing bowl
  • 5. Transfer
  • 6. Pour syrup into fruit
  • 7. Blend together until smooth
  • 8. Chill in fridge
  • 9. Churn in ice cream maker
  • 10. Freeze until firm
  • 11. Serve
