Harissa is an aromatic paste that packs a spicy punch. Here it adds fragrant flavour to fried aubergine cubes. Piled into flatbreads with a generous smear of hummus, fresh rocket and coriander makes this a mouth-watering lunch.

Step preview

  1. Prep and set aside aubergine: cubed - 1 cm
  2. Prep and set aside coriander: chopped
  3. Get a clean medium bowl
  4. Add prepared aubergine
  5. Add harissa
  6. Toss until coated
  7. Get a clean frying pan
  8. Add olive oil
  9. Heat on medium-high heat
  10. Transfer vegetables to frying pan
  11. Cook for approx 6min until softened
  12. Get a clean serving plate
  13. Warm pita bread
  14. Spread with hummus
  15. Transfer content of frying pan to 2 bread
  16. Scatter rocket
  17. Top with prepared coriander
  18. Serve
