Dahl is a satisfying, thick lentil stew that is warm with Indian spices. Here it is served simply, piled onto naan bread with a scattering of fresh coriander, but it would be just as good as part of an Indian feast.

    300g (about 1½ cups)

    900ml (3¾ cups)

Step preview

  1. Add peanut oil, onion and red bell pepper to a clean frying pan
  2. Cook until softened - approx 3 min
  3. Add tomato and garlic clove to the mixture
  4. Cook - approx 2 min
  5. Add curry powder, ground turmeric and red lentils to the mixture
  6. Stir well
  7. Add vegetable stock to the mixture
  8. Boil - approx 5 min
  9. Reduce and cover
  10. Simmer until just cooked - approx 15 min
  11. Add salt & pepper to the mixture
  12. Transfer mixture to 4 large serving bowls
  13. Add greek yogurt to the large serving bowl
  14. Garnish with coriander
  15. Serve immediately
