Dahl is a satisfying, thick lentil stew that is warm with Indian spices. Here it is served simply, piled onto naan bread with a scattering of fresh coriander, but it would be just as good as part of an Indian feast.

  1. Prep and set aside onion: finely sliced
  2. Prep and set aside red bell pepper: cored, deseeded & sliced
  3. Prep and set aside tomato: coarsely chopped
  4. Prep and set aside garlic clove: coarsely chopped
  5. Prep and set aside coriander: chopped
  6. Get a clean frying pan
  7. Add peanut oil
  8. Add prepared onion
  9. Add prepared red bell pepper
  10. Cook for approx 3min until softened
  11. Add prepared tomato
  12. Add prepared garlic clove
  13. Cook for approx 2min
  14. Add curry powder
  15. Add ground turmeric
  16. Add red lentils
  17. Stir well
  18. Add vegetable stock
  19. Boil for approx 5min
  20. Reduce and cover
  21. Simmer for approx 15min until just cooked
  22. Add salt & pepper
  23. Transfer mixture to 4 large serving bowls
  24. Add greek yogurt
  25. Garnish with prepared coriander
  26. Serve immediately
