This is a real treat when you fancy a hassle-free stew. Because the fish cooks in minutes, you could easily make the zesty sauce in advance and heat it back up to add the fish. Use a combination of your favourite types of fish and serve with couscous.

Step preview

  1. Prep and set aside celery stalk: finely sliced
  2. Prep and set aside courgette: sliced
  3. Prep and set aside cod fillet: cubed
  4. Prep and set aside fresh parsley: chopped
  5. Get a clean frying pan
  6. Add olive oil
  7. Add prepared celery stalk
  8. Add garlic clove
  9. Add onion
  10. Add prepared courgette
  11. Cook for approx 5min on medium heat until soft
  12. Add paprika
  13. Stir for approx 1min
  14. Add dry white wine
  15. Simmer
  16. Add tinned chopped tomatoes
  17. Simmer for approx 5min
  18. Add drained, rinsed tinned chickpeas
  19. Add lemon zest
  20. Add vegetable stock
  21. Season with salt & pepper to taste
  22. Simmer until thickened
  23. Add prepared cod fillet
  24. Cover
  25. Simmer for approx 5min until flaky
  26. Get a clean saucepan
  27. Add couscous
  28. Add boiling water
  29. Cover until just cooked then fluff with a fork
  30. Spoon couscous into medium bowl
  31. Transfer stew to medium bowl
  32. Garnish with prepared fresh parsley
  33. Serve immediately
