This is a real treat when you fancy a hassle-free stew. Because the fish cooks in minutes, you could easily make the zesty sauce in advance and heat it back up to add the fish. Use a combination of your favourite types of fish and serve with couscous.

Step preview

  1. Add olive oil, celery stalk, garlic clove, onion and courgette to a clean frying pan
  2. Cook until soft - approx 5 min, medium heat
  3. Add paprika to the stew
  4. Stir - approx 1 min
  5. Add dry white wine to the stew
  6. Simmer
  7. Add tinned chopped tomatoes to the stew
  8. Simmer - approx 5 min
  9. Add tinned chickpeas, lemon zest and vegetable stock to the stew
  10. Season with salt & pepper to taste
  11. Simmer until thickened
  12. Add cod fillet to the stew
  13. Cover
  14. Simmer until flaky - approx 5 min
  15. Add couscous and water to a clean saucepan
  16. Cover until just cooked then fluff with a fork
  17. Spoon couscous into medium bowl
  18. Transfer stew to medium bowl
  19. Garnish with fresh parsley
  20. Serve immediately
