This elegant salmon dish would be as welcome as a midweek meal as it would be at a dinner party. Ready in just 20 minutes, crisp, salty prosciutto adds flavour and helps keep the salmon succulent and moist. Serve with salad or, for a more substantial meal, steamed baby potatoes.

  1. Prep and set aside salmon fillet: skinned
  2. Prep and set aside fresh parsley: chopped
  3. Get a clean cutting board
  4. Add prepared salmon fillet
  5. Season with salt & pepper
  6. Scatter prepared fresh parsley
  7. Wrap with prosciutto tightly
  8. Get a clean frying pan
  9. Add olive oil
  10. Heat on medium-high heat
  11. Transfer fish to frying pan
  12. Cook each side for approx 4min on medium-high heat
  13. Transfer content of frying pan to serving plate
  14. Garnish with rocket
  15. Add lemon
  16. Serve immediately
