Fresh herbs have been used to flavour our fougasse bread recipe, delicious as a shared starter with olive oil, antipasti and charcuterie. (Tip: The dough should be wet, do not be tempted to add more flour-you will use flour on the worktop. Handle the dough gently to keep as much air in it as possible.)

  1. Prep and set aside water: warm
  2. Prep and set aside fresh sage: destalked & chopped
  3. Prep and set aside fresh thyme: destalked & chopped
  4. Prep and set aside fresh basil: destalked & chopped
  5. Prep and set aside fresh oregano: destalked & chopped
  6. Fit midi blade to kCook bowl
  7. Add bread flour
  8. Add quick-rise yeast
  9. Add sugar
  10. Add salt
  11. Add prepared water
  12. Add olive oil
  13. Add prepared fresh sage
  14. Add prepared fresh thyme
  15. Add prepared fresh basil
  16. Add prepared fresh oregano
  17. Fit kCook bowl to kCook Multi
  18. Attach lid to kCook bowl with filler cap fitted
  19. Mix with filler cap fitted - 2 min, speed 4
  20. Mix with filler cap fitted - 3 min, speed 7
  21. Remove midi blade from kCook bowl
  22. Heat with filler cap fitted - 1 hr 30 min, 30°C
  23. Prepare a clean work surface
  24. Dust with plain flour
  25. Transfer content of kCook bowl to work surface gently
  26. Dust and cover
  27. Let rest - 5 min
  28. Divide into thirds
  29. Cut carefully
  30. Grease
  31. Transfer content of work surface to baking pan and cover
  32. Let rise until doubled - 1 hr
  33. Pre-heat - 220°C
  34. Season
  35. Bake until golden brown - 12 min, 220°C
  36. Serve
