Fresh herbs have been used to flavour our fougasse bread recipe, delicious as a shared starter with olive oil, antipasti and charcuterie. (Tip: The dough should be wet, do not be tempted to add more flour-you will use flour on the worktop. Handle the dough gently to keep as much air in it as possible.)

  1. Prep and set aside water: warm
  2. Prep and set aside fresh sage: destalked & chopped
  3. Prep and set aside fresh thyme: destalked & chopped
  4. Prep and set aside fresh basil: destalked & chopped
  5. Prep and set aside fresh oregano: destalked & chopped
  6. Fit midi blade to kCook bowl
  7. Get the kCook bowl
  8. Add bread flour
  9. Add quick-rise yeast
  10. Add sugar
  11. Add salt
  12. Add prepared water
  13. Add olive oil
  14. Add prepared fresh sage
  15. Add prepared fresh thyme
  16. Add prepared fresh basil
  17. Add prepared fresh oregano
  18. Fit kCook bowl to kCook Multi
  19. Attach lid to kCook bowl with filler cap fitted
  20. Mix for 2min with filler cap fitted
  21. Mix for 3min with filler cap fitted
  22. Remove midi blade from kCook bowl
  23. Heat for 1h 30min with filler cap fitted
  24. Prepare a work surface
  25. Dust with plain flour
  26. Transfer content of kCook bowl to work surface gently
  27. Dust and cover
  28. Let rest for 5min
  29. Divide into thirds
  30. Cut carefully
  31. Grease
  32. Transfer content of work surface to baking pan and cover
  33. Let rise for 1h until doubled
  34. Pre-heat
  35. Season
  36. Bake for 12min until golden brown
  37. Serve
