Salmorejo is a very common dish from the south of Spain. It's really versatile because you can eat it as cream topped with additional ingredients like ham, boiled egg or matured cheese. But you can use this cream as a sauce, an amazing idea is to make deep fried aubergine slices and dip them into salmorejo.

Step preview

  1. Add tomato and garlic clove to a clean food processor bowl
  2. Blend gradually until blended - approx 30 sec, medium speed
  3. Add salt, rustic french bread and extra virgin olive oil to the food processor bowl
  4. Blend - approx 30 sec, medium speed
  5. Blend completely until creamy - approx 2 min, high speed
  6. Serve
