This basic white loaf has a lovely crisp crust. Bake in a rustic round, or divide dough into 2 loaf pans for square slices. Requires leavening for 8 hours or overnight.

  • Bread flour icon

    225 g (about 1 ¾ cups)

  • Active dried yeast icon

    1 teaspoon (about 4.05 g)

  • Water icon

    200 g (about ¾ cup)warm

  • Plain yogurt icon
    Plain yogurt

    75 g (about ¼ cup)

  • Salt icon

    2 teaspoons (about 12 g)

    METHOD


  • 1. Add bread flour, active dried yeast and water to a clean large mixing bowl
  • 2. Mix well and cover
  • 3. Let rest - approx 8 hr
  • 4. Add water, active dried yeast, plain yogurt, bread flour and salt to the dough
  • 5. Knead until elastic - 10 min, dough hook
  • 6. Grease a clean large mixing bowl
  • 7. Transfer dough to large mixing bowl
  • 8. Cover with plastic wrap
  • 9. Let rise until doubled - 1 hr 30 min
  • 10. Line a clean baking sheet with parchment paper
  • 11. Turn out large mixing bowl on lightly-floured surface
  • 12. Shape into a ball
  • 13. Transfer content of large mixing bowl to baking sheet
  • 14. Cover with plastic wrap until doubled - 1 hr
  • 15. Pre-heat oven - 210°C
  • 16. Cut
  • 17. Bake - 20 min, 210°C
  • 18. Reduce - 190°C
  • 19. Bake until hollow-sounding when tapped - 10 min, 190°C
  • 20. Let cool
