Deliciously fresh and light lemon bars. This recipe makes 30, so there are plenty to share!

  • Plain flour icon

    300 g (about 2 ¼ cups)

    100 g (about ¾ cup)

    240 g (about 1 ¼ cups)

  • Lemon icon

    2 (about 116 g)juice of, zest of

  • Egg icon

    4 (about 200 g)

  • Powdered sugar icon

    METHOD


  • 1. Pre-heat oven - 170°C
  • 2. Line a clean baking pan with parchment paper
  • 3. Add plain flour and powdered sugar to a clean large mixing bowl
  • 4. Whisk until combined
  • 5. Add unsalted butter to the crumbs
  • 6. Mix until mixture comes together
  • 7. Press crumbs into baking pan
  • 8. Bake until light golden - 20 min, 170°C
  • 9. Add superfine sugar, lemon, plain flour and egg to a clean large mixing bowl
  • 10. Beat until smooth
  • 11. Pour filling into base
  • 12. Bake - 160°C
  • 13. Bake until just set - 25 min, 160°C
  • 14. Let cool
  • 15. Cut
  • 16. Sprinkle with powdered sugar
