These healthy meatballs are packed with nutrients from kale and Asian-inspired flavors from lemongrass, garlic, and ginger. These meatballs are baked, but you could cook them on the stovetop if you prefer. Serve with a side of potatoes and more vegetables!

Step preview

  1. Pre-heat oven - 170°C
  2. Add ginger, lemongrass stalk, garlic clove, lime juice, spring onion, coriander, kale and sesame oil to a clean food processor bowl
  3. Pulse
  4. Transfer content of food processor bowl to large mixing bowl
  5. Add minced chicken, egg and salt & pepper to the large mixing bowl
  6. Combine gently
  7. Scoop into balls
  8. Transfer content of large mixing bowl to baking sheet
  9. Bake - 20 min, 170°C
  10. Serve
