I based this recipe on my favorite fudge brownie recipe, but I switched to oatmeal flour. The oatmeal does give a distinct texture — a bit more substantial feeling.

Step preview

  1. Pre-heat - 175°C
  2. Grease a clean square pan
  3. Add gluten-free oats, bicarbonate of soda and coffee powder to a clean large mixing bowl
  4. Whisk briefly then set aside
  5. Add unsalted butter to a clean saucepan
  6. Melt gently - low heat
  7. Add sugar to the saucepan and mix
  8. Cook and turn off heat - 1 min
  9. Add cocoa powder and salt to the saucepan
  10. Stir until combined
  11. Add vanilla extract to the saucepan
  12. Add egg to the saucepan gradually while whisking
  13. Transfer content of large mixing bowl to saucepan
  14. Stir until combined
  15. Let cool - approx 10 min
  16. Add chocolate chips to the saucepan
  17. Stir briefly until combined
  18. Transfer content of saucepan to square pan
  19. Bake - 30 min, 175°C
  20. Let cool - approx 20 min
  21. Cut into squares
