I based this recipe on my favorite fudge brownie recipe, but I switched to oatmeal flour. The oatmeal does give a distinct texture — a bit more substantial feeling.

Step preview

  1. Pre-heat - 175°C
  2. Grease a clean square pan
  3. Get a clean large mixing bowl
  4. Add ground gluten-free oats
  5. Add bicarbonate of soda
  6. Add coffee powder
  7. Whisk briefly then set aside
  8. Get a clean saucepan
  9. Add unsalted butter
  10. Melt gently - low heat
  11. Add sugar and mix
  12. Cook and turn off heat - 1 min
  13. Add cocoa powder
  14. Add salt
  15. Stir until combined
  16. Add vanilla extract
  17. Add egg gradually while whisking
  18. Transfer content of large mixing bowl to saucepan
  19. Stir until combined
  20. Let cool - approx 10 min
  21. Add chocolate chips
  22. Stir briefly until combined
  23. Transfer content of saucepan to square pan
  24. Bake - 30 min, 175°C
  25. Let cool - approx 20 min
  26. Cut into squares
