These are dense, chocolatey, and more cake-like than any flourless dessert I’ve ever made. They were fabulous! Throw on some frosting, and you have a pretty darn delicious dessert. If you’re dairy free too, just substitute your butter replacement and it should work just fine!

Step preview

  1. Pre-heat oven - 190°C
  2. Add semisweet chocolate and unsalted butter to a clean large mixing bowl
  3. Heat in microwave until completely melted
  4. Whisk together until blended
  5. Add brown sugar, salt and egg to the large mixing bowl
  6. Whisk in until smooth
  7. Add cocoa powder and coffee powder to the large mixing bowl
  8. Mix until combined
  9. Prepare a clean mini muffin pan with paper muffin cups
  10. Transfer content of large mixing bowl to mini muffin pan
  11. Bake until just set - 15 min, 190°C
  12. Transfer onto cooling rack until completely cool
  13. Add cream cheese and unsalted butter to a clean stand mixer bowl
  14. Mix until light and fluffy
  15. Add cocoa powder, powdered sugar and vanilla extract to the stand mixer bowl
  16. Mix until smooth
  17. Frost with piping bag
