    METHOD


  • 1. Pre-heat oven - 175°C
  • 2. Add butter to a clean saucepan
  • 3. Cook until simmering while stirring occasionally - medium heat
  • 4. Transfer content of saucepan to small bowl
  • 5. Let cool - approx 25 min
  • 6. Add plain flour, ground cinnamon, bicarbonate of soda, cornflour, rolled oats and salt to a clean large mixing bowl
  • 7. Mix until combined
  • 8. Add brown sugar and granulated sugar to a clean medium bowl
  • 9. Transfer content of small bowl to medium bowl
  • 10. Whisk together
  • 11. Add egg and vanilla extract to the medium bowl
  • 12. Whisk until combined
  • 13. Transfer content of large mixing bowl to medium bowl
  • 14. Add chocolate chips to the medium bowl
  • 15. Mix together until well combined
  • 16. Prepare a clean baking sheet with parchment paper
  • 17. Scoop content of medium bowl onto baking sheet
  • 18. Bake until just set - 10 min, 175°C
  • 19. Transfer onto cooling rack
