Oatmeal cookies get an upgrade with this brown butter recipe — brown butter adds a nutty flavor and depth that’s hard to resist! These cookies are not cakey, but rather soft, dense, and almost chewy with the oatmeal. Use whatever kind of chocolate you want, or raisins if you prefer!

Step preview

  1. Pre-heat oven - 175°C
  2. Add butter to a clean saucepan
  3. Cook until simmering while stirring occasionally - medium heat
  4. Transfer content of saucepan to small bowl
  5. Let cool - approx 25 min
  6. Add plain flour, ground cinnamon, bicarbonate of soda, cornflour, rolled oats and salt to a clean large mixing bowl
  7. Mix until combined
  8. Add brown sugar and granulated sugar to a clean medium bowl
  9. Transfer content of small bowl to medium bowl
  10. Whisk together
  11. Add egg and vanilla extract to the medium bowl
  12. Whisk until combined
  13. Transfer content of large mixing bowl to medium bowl
  14. Add chocolate chips to the medium bowl
  15. Mix together until well combined
  16. Prepare a clean baking sheet with parchment paper
  17. Scoop content of medium bowl onto baking sheet
  18. Bake until just set - 10 min, 175°C
  19. Transfer onto cooling rack
