These are a South African pastry, deep fried and dunked in sugar syrup. Basically South Africa's answer to the doughnut, but dunked in a glaze. (It may make more than 20 that was just a guestimate)

Step preview

  1. Add caster sugar, cream of tartar, ginger, lemon juice, water and cinnamon stick to a clean large saucepan
  2. Boil until bubbles form
  3. Simmer - 10 min, low heat
  4. Let cool
  5. Refrigerate
  6. Add plain flour, cornflour, baking powder, sea salt, caster sugar, milk, egg and unsalted butter to a clean large mixing bowl
  7. Knead until mixture comes together and cover
  8. Refrigerate - 30 min
  9. Roll out until 1 cm thick
  10. Roll into balls
  11. Add vegetable oil to a clean saucepan
  12. Fry one by one until golden brown then set aside
  13. Drizzle
  14. Let cool
