These are a South African pastry, deep fried and dunked in sugar syrup. Basically South Africa's answer to the doughnut, but dunked in a glaze. (It may make more than 20 that was just a guestimate)

Step preview

  1. Get a clean large saucepan
  2. Add caster sugar
  3. Add cream of tartar
  4. Add chopped ginger
  5. Add lemon juice
  6. Add water
  7. Add cinnamon stick
  8. Boil until bubbles form
  9. Simmer - 10 min, low heat
  10. Let cool
  11. Refrigerate
  12. Get a clean large mixing bowl
  13. Add plain flour
  14. Add cornflour
  15. Add baking powder
  16. Add sea salt
  17. Add caster sugar
  18. Add milk
  19. Add egg
  20. Add unsalted butter
  21. Knead until mixture comes together and cover
  22. Refrigerate - 30 min
  23. Roll out until 1 cm thick
  24. Roll into balls
  25. Get a clean saucepan
  26. Add vegetable oil
  27. Fry one by one until golden brown then set aside
  28. Drizzle
  29. Let cool
