Crunchy biscuit base, juicy berry centre and buttery crumble topping served with a creamy, white chocolate custard dip. One bar is just not enough. The custard can be served warm, but is also delicious as a cool dip – think of the creamy custard in the custard slices you buy from the bakery – laced with melted white chocolate. The base of the streusel slice is made from the exactly the same ingredients as the topping – meaning you make the base and the topping in the same bowl. The base is simply squished into the baking tray firmly – which results in it melding together into a biscuity-crisp base. The topping, on the other hand, is sprinkled on – resulting in the crumbly streusel we all love.

Step preview

  1. Pre-heat oven - 190°C
  2. Prepare a clean baking dish with parchment paper
  3. Add plain flour and baking powder to a clean large mixing bowl
  4. Rub in butter the large mixing bowl
  5. Rub in until coarse crumbs form
  6. Add white sugar, light brown sugar, salt, egg and vanilla extract to the large mixing bowl
  7. Mix
  8. Transfer half of content of large mixing bowl to baking dish
  9. Flatten evenly
  10. Add strawberries, blueberries, white sugar, lemon juice and cornflour to a clean medium bowl
  11. Mix gently
  12. Transfer content of medium bowl to baking dish
  13. Spread evenly
  14. Sprinkle content of large mixing bowl with baking dish
  15. Bake until golden brown - 40 min, 190°C
  16. Let cool
  17. Add caster sugar, egg yolk and cornflour to a clean jug
  18. Whisk then set aside
  19. Add heavy cream, milk and vanilla extract to a clean saucepan
  20. Heat until just boiling and turn off heat
  21. Transfer content of saucepan to jug bit by bit while whisking
  22. Return content of jug to saucepan
  23. Stir slowly until thickened and turn off heat - medium heat
  24. Mix in unsalted butter to the saucepan
  25. Add white chocolate to the saucepan
  26. Let rest until melted - approx 2 min
  27. Stir until completely mixed
  28. Slice baking dish
  29. Serve
