Step preview

  1. Pre-heat - 190°C
  2. Add sweet potato to a clean baking sheet
  3. Roast until soft - 50 min, 190°C
  4. Set aside
  5. Add olive oil to a clean large cast iron skillet
  6. Heat - medium heat
  7. Add spinach, nutmeg and salt & pepper to the large cast iron skillet
  8. Cook until softened and continue
  9. Add egg to a clean large mixing bowl
  10. Whisk
  11. Add feta cheese and cheddar cheese to the large cast iron skillet
  12. Scoop content of baking sheet onto large cast iron skillet
  13. Transfer content of large mixing bowl to large cast iron skillet
  14. Top with feta cheese and cheddar cheese
  15. Bake until light golden - 15 min, 190°C
  16. Serve immediately
