This is a treat all year round. It makes a great snack or palate cleanser. If you can get your hands on blood oranges or a pomelo, all the better.

    Method

  • 1. Slice blood orange, grapefruit and orange into a clean cutting board
  • 2. Transfer to the plate and sprinkle with salt
  • 3. Garnish with shallot
  • 4. Add extra virgin olive oil, sherry vinegar, honey, lime and fresh parsley to a clean small bowl
  • 5. Whisk together until combined
  • 6. Drizzle with dressing
