This is a traditional Danish Pebbernøder recipe. There are regional variations on this spicy holiday cookie but this is the Danish version. My attempt at this recipe made 82 cookies of varying sizes whereas according to the recipe it makes 100 large ones ( this is what I've said it makes ) or 200 normal size ones.

Step preview

  1. Get a clean stand mixer bowl
  2. Pre-heat oven - 200°C
  3. Add plain flour, ground cinnamon, ground cloves, white pepper, ground cardamom, nutmeg, ground ginger, vanilla extract, bicarbonate of soda, salt and caster sugar to the stand mixer bowl and mix
  4. Add egg and unsalted butter to the dough while mixing
  5. Divide into quarters
  6. Roll into a log
  7. Cut into rounds
  8. Transfer dough to baking sheet
  9. Bake - 10 min, 200°C
  10. Let cool
