This is a traditional Danish Pebbernøder recipe. There are regional variations on this spicy holiday cookie but this is the Danish version. My attempt at this recipe made 82 cookies of varying sizes whereas according to the recipe it makes 100 large ones ( this is what I've said it makes ) or 200 normal size ones.

Step preview

  1. Get a clean stand mixer bowl
  2. Pre-heat - 200°C
  3. Add plain flour
  4. Add ground cinnamon
  5. Add ground cloves
  6. Add ground white pepper
  7. Add ground cardamom
  8. Add ground nutmeg
  9. Add ground ginger
  10. Add vanilla extract
  11. Add bicarbonate of soda
  12. Add salt
  13. Add caster sugar and mix
  14. Add egg
  15. Add softened unsalted butter while mixing
  16. Divide into quarters
  17. Roll into a log
  18. Cut into rounds
  19. Transfer dough to baking sheet
  20. Bake - 10 min, 200°C
  21. Let cool
