    Method

  • 1. Pre-heat oven - 200°C / 390°F
  • 2. Add plain flour, ground cinnamon, ground cloves, white pepper, ground cardamom, nutmeg, ground ginger, vanilla extract, bicarbonate of soda, salt and caster sugar to a clean stand mixer bowl and mix
  • 3. Add the egg and the soft butter. Use your hands or a stand mixer to mix/knead the dough until it has a uniform consistency
  • 4. Divide the dough into four pieces and roll them to four long bars
  • 5. Use a knife to cut the bars into small walnut sized pieces. Roll each piece into a small Peppernut cookie
  • 6. Transfer cookies to baking sheet
  • 7. Bake - 10 min, 200°C / 390°F
  • 8. Let cool and serve
