While most people gather around a wonderful roasted turkey over the holidays, our family does not. We created a tradition of having roast chicken instead. Being a military family means that we spend many holidays far away from family. The fact that we are a family of three means that a turkey would be a bit much. So, we opt for roast chicken. It is the ultimate comfort food for us and it always reminds us that "home" can be wherever we are at the moment. I am happy to submit this recipe for Drop's Holiday Recipe Swap.

  1. Pre-heat - 190°C
  2. Get a clean medium roasting dish
  3. Add water
  4. Add diced onion
  5. Add chopped button mushroom
  6. Add balsamic vinegar
  7. Get a clean plate
  8. Add whole chicken
  9. Insert lemon
  10. Insert chopped garlic
  11. Transfer content of plate to medium roasting dish
  12. Add olive oil
  13. Add salt
  14. Add ground black pepper
  15. Add poultry seasoning
  16. Roast - approx 40 min, 190°C
  17. Remove carefully
  18. Remove carefully with slotted spoon
  19. Heat until boiling - medium heat
  20. Add poultry seasoning
  21. Add salt
  22. Add ground black pepper
  23. Add balsamic vinegar
  24. Get a clean small bowl
  25. Add cornflour
  26. Add water
  27. Mix
  28. Transfer content of small bowl to medium roasting dish
  29. Combine
  30. Serve
