Method
1. Pre-heat oven - 190°C / 375°F
2. Add water, onion, button mushroom and balsamic vinegar to a clean medium roasting dish
3. Insert lemon and garlic into the cavity of the chicken
4. Place chicken on top of mushroom mixture
5. Pour oil over the chicken and rub it with hands to make sure it covers the whole chicken. Sprinkle with salt, pepper and poultry seasoning
6. Roast - approx 40 min, 190°C / 375°F
7. Remove chicken from pan and let rest
8. Remove chicken and place mushrooms and onions in a separate dish
9. Place roasting pan on stove element and bring drippings to a boil
10. Add poultry seasoning, salt, black pepper and balsamic vinegar
11. Add cornstarch and water to a clean small bowl and mix until smooth
12. Slowly add constarch slurry into boiling drippings. Only use as much as you need
13. Add the thickened gravy to the mushrooms and onions
14. Serve the chicken with your choice of sides such as: potatoes and vegetables
