These quinoa hash browns are a weekend ritual. They're made from grated potatoes and quinoa, cooked in a little butter and garnished with chopped green onions.

  • Quinoa icon

    65 g (about ½ cup)

    160 g (about ¾ cup)

    1 ½ cups (about 360 g)grated

    1 teaspoon (about 6.5 g)

    ¼ teaspoon (about 0.54 g)

  • Unsalted butter icon

    7 g (about 1 ½ teaspoons)

    METHOD


  • 1. Add quinoa and water to a clean saucepan
  • 2. Heat until boiling
  • 3. Simmer and set aside - 10 min
  • 4. Let rest - 6 min
  • 5. Let cool completely
  • 6. Transfer quinoa to large mixing bowl
  • 7. Add potato, egg, sea salt and black pepper to the mixture
  • 8. Mix together until combined
  • 9. Melt unsalted butter the mixture
  • 10. Scoop mixture onto large cast iron skillet
  • 11. Flatten
  • 12. Fry until golden brown
  • 13. Serve
