Step preview

  1. Prep and set aside sweet potato: peeled & cubed
  2. Prep and set aside water: boiling
  3. Prep and set aside pistachios: toasted
  4. Prep and set aside garlic clove: crushed
  5. Prep and set aside fresh chili: deseeded & finely chopped
  6. Get a clean large roasting dish
  7. Add prepared sweet potato
  8. Get a clean small bowl
  9. Add extra virgin olive oil
  10. Add ground coriander
  11. Add ground cumin
  12. Add ground cinnamon
  13. Add salt & pepper
  14. Mix well with tablespoon until combined
  15. Pour marinade into potatoes
  16. Roast for 30min until tender
  17. Let cool for approx 30min
  18. Get a clean saucepan
  19. Add prepared water
  20. Add salt
  21. Boil green beans quickly
  22. Rinse thoroughly until cool
  23. Pat dry with paper towels
  24. Transfer vegetables to large serving bowl
  25. Transfer potatoes to large serving bowl
  26. Add spinach
  27. Add prepared pistachios
  28. Toss until combined
  29. Get a clean medium bowl
  30. Add greek yogurt
  31. Add prepared garlic clove
  32. Add prepared fresh chili
  33. Add lemon juice
  34. Add honey
  35. Add salt & pepper
  36. Add extra virgin olive oil
  37. Whisk until completely mixed
  38. Pour dressing into salad and mix
  39. Serve immediately
