  1. Prep and set aside onion: finely sliced
  2. Prep and set aside chorizo: finely sliced
  3. Prep and set aside chicken breast: cubed & skinned
  4. Prep and set aside tinned green lentils: rinsed
  5. Prep and set aside chicken stock: hot
  6. Get a clean frying pan
  7. Add olive oil
  8. Heat on medium-high heat
  9. Add prepared onion
  10. Add prepared chorizo
  11. Add prepared chicken breast
  12. Cook in frying pan for approx 6min until golden brown while stirring occasionally
  13. Add prepared tinned green lentils
  14. Add dried thyme
  15. Add prepared chicken stock
  16. Add dijon mustard
  17. Stir
  18. Cook for approx 2min until just boiling
  19. Season with salt & pepper
  20. Serve
  21. Serve rustic french bread
