Sweet and tender cookies with wonderfully crisp edges, that make delicious anytime treats. Enjoy plain, or decorate with icing to make them festive.

    METHOD


  • 1. Add unsalted butter, cream cheese and granulated sugar to a clean large mixing bowl
  • 2. Cream until light and fluffy
  • 3. Add egg, vanilla extract and lemon to the dough
  • 4. Mix briefly until combined
  • 5. Add all purpose flour, baking powder and salt to the dough
  • 6. Mix until dough forms
  • 7. Wrap with plastic wrap
  • 8. Chill in fridge - approx 1 hr
  • 9. Pre-heat oven - 175°C
  • 10. Line 2 clean baking sheets with parchment paper
  • 11. Roll out dough until 1/4" thick
  • 12. Cut
  • 13. Transfer dough to 2 baking sheets
  • 14. Bake until browned at edges - 8 min, 175°C
  • 15. Transfer onto cooling rack
  • 16. Add egg white to a clean large mixing bowl
  • 17. Whisk until frothy
  • 18. Add powdered sugar to the icing
  • 19. Whisk until thick
  • 20. Decorate cookies with piping bag
