Method
1. Pre-heat oven - 180°C / 355°F
2. Line a clean baking sheet with parchment paper
3. Melt chocolate in microwave - low heat
4. Add egg yolk and granulated sugar to a clean large mixing bowl
5. Beat until light and fluffy
6. Add egg white to a clean large mixing bowl
7. Whisk until stiff peaks form
8. Fold the melted chocolate into the egg yolk and sugar mixture
9. Fold egg whites into batter gently until combined
10. Transfer batter to baking sheet
11. Bake - 15 min, 180°C / 355°F
12. Cover with kitchen towel and let cool
13. Add cranberries, orange, cloves and cinnamon stick to a clean saucepan
14. Cook until soft - 10 min
15. Remove cinnamon stick and add granulated sugar
16. Stir until dissolved
17. Let cool completely
18. Add mascarpone cheese and grand marnier to a clean medium bowl
19. Whisk until well combined
20. Turn out cake onto a parchment paper dusted with powdered sugar
21. Peel off the original parchment paper
22. Spread mascarpone mixture over cake
23. Cover with cooled cranberries
24. Roll
25. Chill in fridge
26. Slice
