  1. Pre-heat
  2. Line a baking sheet with parchment paper
  3. Get a clean small bowl
  4. Add dark chocolate
  5. Melt in microwave on low heat
  6. Get a clean large mixing bowl
  7. Add egg yolk
  8. Add granulated sugar
  9. Beat until light and fluffy
  10. Get a clean large mixing bowl
  11. Add egg white
  12. Whisk until stiff peaks form
  13. Fold chocolate mixture into batter gently
  14. Fold egg whites into batter gently
  15. Transfer batter to baking sheet
  16. Bake for 15min
  17. Cover with kitchen towel and let cool
  18. Get a clean saucepan
  19. Add cranberries
  20. Add juice of, zest of orange
  21. Add cloves
  22. Add cinnamon stick
  23. Cook for 10min until soft
  24. Remove cinnamon stick
  25. Get a clean small bowl
  26. Add granulated sugar
  27. Transfer sugar mixture to fruit
  28. Stir until dissolved
  29. Let cool completely
  30. Get a clean medium bowl
  31. Add mascarpone cheese
  32. Add grand marnier
  33. Whisk until well combined
  34. Turn out cake
  35. Peel
  36. Spread cheese mixture with baking sheet
  37. Spread fruit with baking sheet
  38. Roll
  39. Chill in fridge
  40. Slice
