    METHOD


  • 1. Pre-heat oven - 200°C
  • 2. Grease and flour a clean muffin pan
  • 3. Add all purpose flour, baking powder and salt to a clean large mixing bowl
  • 4. Mix briefly until combined
  • 5. Add apple, pecan halves and blue cheese to the batter
  • 6. Mix briefly until combined
  • 7. Add egg, greek yogurt, milk and sunflower oil to a clean large mixing bowl
  • 8. Whisk together until combined
  • 9. Transfer wet ingredients to batter
  • 10. Fold gently until just combined
  • 11. Transfer batter to muffin pan
  • 12. Bake until golden brown - 25 min, 200°C
  • 13. Transfer onto cooling rack
