    Method

  • 1. Add fine bulgur to a clean medium bowl
  • 2. Soak with water - 30 min
  • 3. Add cucumber, red onion and mint leaves to a clean large mixing bowl
  • 4. Stir
  • 5. Mix in tomato
  • 6. Let rest
  • 7. Add fresh parsley and soaked bulgur, stir thoroughly
  • 8. Add extra virgin olive oil and lemon juice, stir well
  • 9. Mix in allspice, paprika, ground sumac, sea salt and black pepper
  • 10. Garnish with scallion and serve
