These textured trail mix blondies are easy and versatile - use whatever combination of dried fruit and nuts you have in your pantry! Perfect for picnics!

    METHOD


  • 1. Pre-heat oven - 175°C
  • 2. Line a clean muffin pan with paper muffin cups
  • 3. Add all purpose flour, baking powder and salt to a clean medium bowl
  • 4. Whisk briefly until blended
  • 5. Add unsalted butter, light brown sugar and vanilla extract to a clean large mixing bowl
  • 6. Cream together
  • 7. Add egg to the batter
  • 8. Mix until well combined
  • 9. Transfer dry ingredients to batter
  • 10. Mix until just combined
  • 11. Add flaked coconut, chocolate chips, walnuts and dried cranberries to a clean small bowl
  • 12. Transfer mixture to batter
  • 13. Mix until combined
  • 14. Spoon batter into muffin pan
  • 15. Bake until golden brown - 25 min, 175°C
  • 16. Let cool
