Sunbutter, as opposed to peanut butter, is nut free as it is made from sunflower seeds.

  • Sunflower seeds icon

    200 g (about 1 ½ cups)

  • Coconut oil icon

    80 g (about ¼ cup)

  • Coconut sugar icon

    60 g (about ¼ cup)

  • Maca icon

    20 g (about 2 tablespoons)

  • Lucuma powder icon

    1 teaspoon (about 5 g)

  • Hemp seeds icon

    1 tablespoon (about 8 g)

  • Sea salt icon
    Sea salt

    1 pinch

  • Vanilla bean paste icon
    Vanilla bean paste

    2 teaspoons (about 11 g)

  • Chocolate chips icon
    Chocolate chips

    ¼ cup (about 43 g)

  • Sunflower seeds icon

    METHOD


  • 1. Prepare a clean muffin pan
  • 2. Line a clean baking sheet with parchment paper
  • 3. Add sunflower seeds to the baking sheet
  • 4. Bake - 10 min, 200°C
  • 5. Remove and let cool
  • 6. Add coconut oil, coconut sugar, maca, lucuma powder, hemp seeds, sea salt and vanilla bean paste to the TM5 bowl
  • 7. Transfer seeds to TM5 bowl
  • 8. Blend - approx 3 min, 37°C, speed 8
  • 9. Scrape down sides of TM5 bowl
  • 10. Divide mixture between muffin pan
  • 11. Keep tapping the tin very firmly on the bench until the mixture levels off and becomes glossy
  • 12. Decorate with chocolate chips and sunflower seeds
  • 13. Freeze until solid - 30 min
  • 14. Store in plastic container until needed
