When you need comfort food there is nothing quite as comforting as creamy mashed potatoes on top of delicious pulled pork. Grill on! Cheese on! DONE.

  • Butternut squash icon

    ½ (about 300 g)peeled, cubed

    50 g (about 3 ½ tablespoons)melted

  • Milk icon

    100 g (about ½ cup)warm

  • Cheese icon

    100 g (about ½ cup)grated

    1 L (about 1 kg)

    1 dash (about 0.81 g)

    500 g (about 2 cups)

    METHOD


  • 1. Pre-heat oven - 180°C
  • 2. Add water to the TM5 bowl
  • 3. Add potato to the varoma dish
  • 4. Add small sweet potato, butternut squash and carrot to the varoma tray
  • 5. Steam TM5 bowl - approx 20 min, Varoma, speed 4
  • 6. Remove varoma tray
  • 7. Cook potatoes - approx 15 min, Varoma, speed 4
  • 8. Check the potatoes are fully cooked after 35 minutes
  • 9. Let them dry out by emptying the Thermomix bowl and resting the Varoma dish on top for 10 minutes
  • 10. Transfer potatoes to TM5 bowl
  • 11. Add butter, sea salt and black pepper to the TM5 bowl
  • 12. Fit TM5 bowl to TM5
  • 13. Mix - approx 30 sec, speed 5
  • 14. Then add milk to the TM5 bowl
  • 15. Mix - approx 30 sec, speed 5
  • 16. Whisk - approx 30 sec, speed 4
  • 17. Add pulled pork to a clean baking dish
  • 18. Transfer vegetables to baking dish
  • 19. Mix
  • 20. Transfer potatoes to baking dish
  • 21. Spread
  • 22. Sprinkle with cheese
  • 23. Bake until melted - 180°C
  • 24. Serve with steamed greens of choice
