This thick lemon curd is a delicious addition to your pantry — tart yet buttery, sweet yet tangy. Use it as a topping for yogurt, a drizzle for shortbread biscuits, or served with homemade scones.
Ingredients
Lemon3zest of
Unsalted butter115 gmelted
Granulated sugar205 g
Egg3
Lemon juice240 ml
Method
1. Add granulated sugar and egg to a clean medium bowl
2. Beat until combined
3. Whisk lemon juice, lemon and unsalted butter into the medium bowl
4. Cook in the microwave on full power for one minute intervals, stirring after each minute
5. This process will take about 3-5 minutes depending on the strength of your microwave
6. You will know the lemon curd is done cooking when it coats the back of a metal spoon
7. Remove from the microwave, push through a fine, mesh sieve and pour into sterile jar or container
8. Once the curd has cooled to room temperature, cover it with a lid and store it in the refrigerator for about 2 weeks
9. The curd will thicken as it cools
