This thick lemon curd is a delicious addition to your pantry — tart yet buttery, sweet yet tangy. Use it as a topping for yogurt, a drizzle for shortbread biscuits, or served with homemade scones.

    Method

  • 1. Add granulated sugar and egg to a clean medium bowl
  • 2. Beat until combined
  • 3. Whisk lemon juice, lemon and unsalted butter into the medium bowl
  • 4. Cook in the microwave on full power for one minute intervals, stirring after each minute
  • 5. This process will take about 3-5 minutes depending on the strength of your microwave
  • 6. You will know the lemon curd is done cooking when it coats the back of a metal spoon
  • 7. Remove from the microwave, push through a fine, mesh sieve and pour into sterile jar or container
  • 8. Once the curd has cooled to room temperature, cover it with a lid and store it in the refrigerator for about 2 weeks
  • 9. The curd will thicken as it cools
