Method
1. Wash and scrub the sweet potato
2. Add sweet potato to a clean plate
3. Use a fork to pierce holes all over the sweet potato
4. Add water to a clean small bowl
5. Cook in microwave - 6 min, high heat
6. Remove the sweet potato from the microwave and split it open, slicing it down the center from one end to the other
7. The sweet potato should be tender, but the center will still be a bit hard
8. Cook in microwave until soft - 7 min, high heat
9. Remove the sweet potato from the microwave and use a fork to scoop and mash all the flesh from the skin
10. Season with sea salt and black pepper
11. Optional: Mix in a small amount of freshly grated ginger, a dash of cinnamon, and pat of butter
