Microwaved eggs are the perfect filling for a toasted breakfast bagel with avocado and melted cheese, as the firm patty-like texture holds its own against the bread. Cooking scrambled eggs in the microwave won’t get you the creamy, smooth texture from cooking them low and slow, but the quick and easy clean up makes this a handy recipe to have for busy mornings. When doubling the recipe, make sure you use a microwave-safe bowl large enough and remove the eggs to stir every 30 seconds. The eggs should be just barely set when fully cooked.
