Similar to brioche but with added milk and less butter, and with the addition of honey to give a little extra depth of flavor. This milk bread recipe is both forgiving and versatile! It can be made into loaves for slicing, baked in a pan as pull-apart rolls, baked in muffin cups, or formed into buns for sandwiches. It's super soft and fluffy, and rises beautifully. If it lasts longer than a day, wrap it in plastic and re-heat or toast when serving. Makes 2 loaves, or about 12 muffin-sized rolls.

Step preview

  1. Get a clean small bowl
  2. Add heavy cream
  3. Add honey then set aside
  4. Get a clean saucepan
  5. Add bread flour
  6. Add water and mix
  7. Heat for approx 5min on low heat until thickened while whisking
  8. Transfer cream to mixture and mix
  9. Get a clean stand mixer bowl
  10. Add bread flour
  11. Add active dried yeast
  12. Add powdered milk
  13. Add kosher salt and mix
  14. Add egg
  15. Transfer mixture to dough
  16. Knead for approx 5min on medium speed until smooth
  17. Get a clean small bowl
  18. Add cubed unsalted butter then set aside
  19. Transfer butter to dough bit by bit while mixing
  20. Grease a large mixing bowl
  21. Transfer dough to large mixing bowl and cover
  22. Let rise for 1h until doubled
  23. Turn out on lightly-floured surface
  24. Shape and cover
  25. Let rise for 45min
  26. Pre-heat
  27. Bake for 15min until golden brown
