I remember looking at a dessert menu at a restaurant once with my dad and sister and reading ‘Death by Chocolate.’ “That,” my Dad said “we need to order. Death by chocolate is how I want to die!” I was probably 12 at the time so I did not quite understand the humor there. But now, death by chocolate is what I think about when I make and eat these muffins. So rich, so full of chocolate, so good! Oh and brownie points – no butter or oils are used to make these muffins! I also snuck in some whole-wheat flour, though this is optional!

  1. Pre-heat
  2. Line a muffin pan with paper muffin cups
  3. Get a clean stand mixer bowl
  4. Add applesauce
  5. Add honey
  6. Add cane sugar
  7. Add greek yogurt
  8. Mix until combined
  9. Add egg
  10. Add vanilla extract
  11. Add hot coffee
  12. Mix until combined
  13. Get a clean large mixing bowl
  14. Add unbleached flour
  15. Add whole wheat flour
  16. Add cocoa powder
  17. Add baking powder
  18. Add baking soda
  19. Add kosher salt
  20. Whisk briefly until combined
  21. Transfer half of dry ingredients to batter
  22. Mix on low speed until just combined
  23. Transfer the rest of dry ingredients to batter
  24. Mix on low speed until just combined
  25. Add dark chocolate chips
  26. Fold gently
  27. Transfer batter to muffin pan evenly
  28. Bake for 25min until skewer tests clean
  29. Let cool slightly
  30. Serve
