I wanted to whip up a dish for lunch this week that was healthy and light but still satisfying and flavorful. These carrot ginger pancakes fit the bill perfectly! When the pancakes are all done, serve them immediately as an amazing appetizer, light lunch or side dish! Enjoy!

Step preview

  1. Get a clean large mixing bowl
  2. Add peeled, grated carrot
  3. Add peeled, grated garlic clove
  4. Add grated ginger
  5. Squeeze with paper towels until dry
  6. Add finely chopped dill
  7. Add egg
  8. Add greek yogurt
  9. Add quinoa flour
  10. Add ground coriander
  11. Add ground turmeric
  12. Add salt
  13. Add black pepper
  14. Add sriracha sauce
  15. Mix thoroughly until combined
  16. Pre-heat a large cast iron skillet
  17. Grease with butter lightly
  18. Scoop batter onto large cast iron skillet
  19. Flatten gently
  20. Fry each side for approx 2min
  21. Serve immediately
