I don’t understand the whole baked doughnut craze. They’re healthier, I guess. They take forty-five minutes to make as opposed to three hours. But to me, the word “doughnut” connotes something golden and fluffy and fried. Something that feels weighty and substantial when you pick it up, and delightfully indulgent when you take a bite.

Step preview

  1. Get a clean small glass bowl
  2. Add milk
  3. Heat in microwave on medium heat
  4. Sprinkle with active dried yeast
  5. Set aside for approx 5min until foamy
  6. Mix
  7. Get a clean stand mixer bowl
  8. Add egg
  9. Add melted butter
  10. Add granulated sugar
  11. Transfer yeast mixture to dough
  12. Beat
  13. Add all purpose flour and mix
  14. Grease a large mixing bowl
  15. Transfer dough to large mixing bowl
  16. Cover with plastic wrap for approx 1h and let rise
  17. Prepare a cutting board with parchment paper
  18. Turn out dough onto cutting board
  19. Roll out
  20. Cut out
  21. Prepare 2 baking sheets with parchment paper
  22. Transfer dough to 2 baking sheets
  23. Cover with kitchen towel for approx 45min and let rise
  24. Get a clean stockpot
  25. Add canola oil
  26. Heat on high heat
  27. Transfer content of 2 baking sheets to oil mixture
  28. Fry one by one for approx 1min until golden brown
  29. Remove with slotted spoon
  30. Let cool with paper towels
  31. Get a clean medium glass bowl
  32. Add powdered sugar
  33. Add cocoa powder
  34. Add milk
  35. Whisk until smooth
  36. Dip until coated
  37. Add sprinkles
