Bundt cakes are my homage to growing up in the midwest. They look gorgeous and are easy to make in a pinch. I frequently make this when I host a brunch because of the simplicity and how delicious it is with coffee or tea. I have a few friends that are gluten-free, and I recently discovered that I preferred this recipe with a gluten-free flour–it's even more moist!

Step preview

  1. Pre-heat
  2. Grease a bundt pan
  3. Get a clean stand mixer bowl
  4. Add granulated sugar
  5. Add egg
  6. Add vegetable oil
  7. Mix for approx 1min with paddle attachment
  8. Get a clean large mixing bowl
  9. Add gluten-free flour
  10. Add baking soda
  11. Add baking powder
  12. Add ground nutmeg
  13. Add kosher salt
  14. Whisk until combined
  15. Transfer dry ingredients to batter
  16. Mix until just combined
  17. Get a clean medium bowl
  18. Add grated carrot
  19. Fold vegetables into batter
  20. Transfer batter to bundt pan
  21. Bake for 35min until springy to touch
  22. Let cool
  23. Decorate
