What’s not to love about a cake that’s made from luscious dates and is moist, soft and so easy to make! It was so good that I am going to let the recipe do all the talking... really and also maybe because my mouth is stuffed with the last piece of this cake. I fell in love with this cake the minute I popped it out of the oven. It was perfect! The date cake had baked beautifully and it had absolutely no cracks – all I did was dust it with some confectioners sugar and that’s it.

Step preview

  1. Pre-heat
  2. Grease a square pan
  3. Get a clean saucepan
  4. Add water
  5. Heat until boiling
  6. Replace on drop
  7. Add chopped dates
  8. Cook for 5min on medium heat
  9. Mix in baking soda and turn off heat
  10. Soak for 15min
  11. Grind into a fine paste then set aside
  12. Get a clean stand mixer bowl
  13. Add room temperature unsalted butter
  14. Add granulated sugar
  15. Cream on medium speed until light and fluffy
  16. Add egg
  17. Add vanilla extract
  18. Beat until combined
  19. Add all purpose flour
  20. Add whole wheat flour
  21. Add salt
  22. Add baking powder
  23. Transfer purée to batter
  24. Mix until combined
  25. Transfer batter to square pan
  26. Bake for 35min until skewer tests clean
  27. Let cool completely
  28. Dust with powdered sugar
  29. Serve
