Ingredients
Whole wheat flour325 g
Cornmeal85 g
Kosher salt1 teaspoon
Baking soda1 teaspoon
Whole milk yogurt385 g
Molasses170 g
Cranberries110 g
Method
1. Pre-heat oven - 160°C / 320°F
2. Grease a clean loaf pan
3. Add whole wheat flour, cornmeal, kosher salt and baking soda to a clean large mixing bowl and whisk until combined
4. Add whole milk yogurt and molasses to a clean medium bowl and whisk until blended
5. Transfer wet ingredients to the dry ones and mix until just combined
6. Add cranberries and mix until just combined
7. Transfer batter to loaf pan
8. Bake until skewer tests clean - 1 hr
9. Turn out onto cooling rack
