You know you want to. Much better for you and so much tastier than fish fingers, delight everyone with these yummy little flavour bombs. Enjoy!

    INGREDIENTS


  • Parmesan cheese icon
    Parmesan cheese

    50 g (about ¼ cup)cubed

  • Egg icon

    2 (about 100 g)beaten

  • Whitefish filet icon
    Whitefish filet

    1 kg (about 1000)cubed

  • Polenta icon
    Polenta

    150 g (about ¾ cup)

  • Onion powder icon
    Onion powder

    1 teaspoon (about 3 g)

  • Garlic powder icon
    Garlic powder

    1 teaspoon (about 3 g)

  • Smoked paprika icon
    Smoked paprika

    2 teaspoons (about 4 g)

  • Sea salt icon
    Sea salt

    1 teaspoon (about 6 g)

  • Coconut oil icon
    Coconut oil

    METHOD


  • 1. Add parmesan cheese to the TM5 bowl
  • 2. Blend - approx 10 sec, speed 10
  • 3. Then add polenta, onion powder, garlic powder, smoked paprika and sea salt to the TM5 bowl
  • 4. Mix - approx 5 sec, speed 5
  • 5. Transfer mixture to plate
  • 6. Heat in frying pan - medium heat
  • 7. Add coconut oil to a clean frying pan
  • 8. Add egg to a clean medium bowl
  • 9. Add whitefish filet to the egg mixture
  • 10. Transfer egg mixture to dry ingredients
  • 11. Transfer dry ingredients to frying pan
  • 12. Fry each side in frying pan - 4 min, medium heat
  • 13. Test a piece of fish to ensure it is cooked through, remembering it will continue to cook a little further once taken off the heat
  • 14. Place cooked fish on a cooling rack over some paper towel to rest while you continue to cook the remaining fish bites
  • 15. Sprinkle with additional salt and serve with Simple Mayonnaise or Aioli
