Method
1. Add parmesan cheese to the Thermomix bowl
2. Blend with MC on - 10 sec, speed 10
3. Then add polenta, onion powder, garlic powder, smoked paprika and pink Himalayan salt flakes to the TM5 bowl
4. Mix with MC on - 5 sec, speed 5
5. Transfer mixture to plate
6. Pre-heat fry pan over medium heat
7. Add a 1cm deep layer of oil to the pan
8. Add egg to a clean medium bowl
9. Coat fish well in beaten egg, followed by polenta mix
10. Fry fish bites for 3–4 minutes each side (depending on the thickness of the fish) until golden brown
11. Test a piece of fish to ensure it is cooked through, remembering it will continue to cook a little further once taken off the heat
12. Place cooked fish on a cooling rack over some paper towel to rest while you continue to cook the remaining fish bites
13. Sprinkle with additional salt and serve with mayonnaise or aioli
