    ¼ cup (about 7 g)coarsely chopped

    METHOD


  • 1. Add garlic clove and peas to a clean medium bowl then set aside
  • 2. Heat a clean frying pan
  • 3. Add olive oil and shallot to the frying pan
  • 4. Cook until softened - approx 2 min
  • 5. Transfer vegetables to frying pan
  • 6. Cook until tender - approx 2 min
  • 7. Get a clean large mixing bowl
  • 8. Transfer content of frying pan to large mixing bowl
  • 9. Add olive oil, lemon, black pepper, sea salt and mint leaves to the vegetables
  • 10. Blend until smooth
  • 11. Season to taste
