A quick, easy, and colorful alternative to hummus, this spread/dip is great on toast, flatbreads, or with seasonal vegetables. You can use fresh peas if you have them, and frozen ones work just fine too. Served here on toast, topped with sliced baby radishes and sprouts.

Step preview

  1. Get a clean medium bowl
  2. Add minced garlic clove
  3. Add peas then set aside
  4. Heat a frying pan
  5. Add olive oil
  6. Add sliced shallot
  7. Cook for approx 2min until softened
  8. Transfer vegetables to frying pan
  9. Cook for approx 2min until tender
  10. Get a clean large mixing bowl
  11. Transfer content of frying pan to large mixing bowl
  12. Add olive oil
  13. Add juice of, zest of lemon
  14. Add black pepper
  15. Add sea salt
  16. Add coarsely chopped mint
  17. Blend until smooth
  18. Season to taste
